Wood pressed vs refined oil: what's actually different
The short version. Wood pressed oil is crushed out of the seed by a slow-turning wooden ghaani and bottled much as it comes. Refined oil is extracted at industrial scale, usually with a solvent, then bleached and deodorised at around 200°C. Refining wins on smoke point, price and shelf life. Wood pressing keeps the colour, the aroma and the seed's own minor compounds. Both are lawful edible oils. The honest comparison is a trade-off, not a verdict.
What is the difference between wood pressed and refined oil?
Wood pressed oil is squeezed from the seed by a wooden mortar-and-pestle press turning slowly enough that the seed never heats. Nothing is added and nothing is stripped out. Refined oil is extracted with heat and usually a food-grade solvent, then degummed, neutralised, bleached and deodorised. Refining removes colour, aroma, sediment and free fatty acids.
That one difference — what was taken out — explains almost everything else about the two bottles. Refined oil is close to pure triglyceride: pale, odourless, stable, inexpensive and heat-tolerant. Unrefined oil still carries the seed's pigments, aroma compounds, phospholipids, naturally occurring vitamin E and fine solids. Those are exactly the things that make it smell of peanut or of mustard, and they are also the things that make it smoke sooner and keep for less time. One term worth settling before going further: whether cold pressed and wood pressed mean the same thing is a separate question, and it has its own answer.
How is refined oil actually made?
Commercial refining is five industrial steps. Solvent extraction with food-grade hexane pulls out the oil a press cannot reach. Degumming removes phospholipids. Alkali neutralisation strips free fatty acids. Bleaching earth takes out the pigment. Steam deodorising at roughly 200°C removes whatever smell is left. The result is a pale, neutral, shelf-stable fat.
- Extraction. A high-speed expeller takes most of the oil; food-grade hexane dissolves out the remainder, and the solvent is then evaporated off. Between them they recover close to all the oil in the seed. A wooden ghaani recovers far less.
- Degumming. Water or acid pulls out phospholipids and gums that would otherwise cloud the oil.
- Neutralisation. Alkali removes free fatty acids — the compounds that make an unrefined oil smoke early and go off sooner.
- Bleaching. Activated bleaching earth adsorbs the pigments, taking the oil from deep amber to near-colourless.
- Deodorising. Steam under vacuum at roughly 200°C strips the volatile aroma compounds, so the finished oil smells of nothing.
Every one of those steps exists for a reason: yield, stability, neutrality and price. We are not going to tell you refined oil is dangerous — it is a lawful, regulated food, it is what most Indian kitchens use, and there are dishes it genuinely suits better. We would rather set out precisely what the process does and let you decide what you want in your bottle.
Does refined oil have a higher smoke point?
Yes, and this is where refined oil plainly wins. Stripping out free fatty acids and fine seed solids is exactly what raises a smoke point. Refined groundnut oil is usually quoted at around 227°C, while unrefined cold pressed groundnut oil sits nearer 160°C. If you deep fry at high heat every day, refined oil is built for that and most unrefined oils are not.
There are exceptions, and they matter. Cold pressed black and yellow mustard oil hold around 250°C, among the highest of any unrefined oil, and A2 Gir cow ghee is similar. Those are the two we point people to for frying. Sesame and coconut sit at about 177°C — comfortable for tadka, sauteing and shallow frying. Almond and safflower we would not fry in at all: the figures you see published for them, 216°C and 232°C, belong to the refined versions, and the unrefined numbers vary too widely between sources for us to print one honestly. Use both as medium-heat oils, and use almond raw.
Why does wood pressed oil smell and taste so much stronger?
Because the aroma compounds are still in it. Crush a mustard seed and it releases allyl isothiocyanate — that sharp catch at the back of the nose. Deodorising at 200°C is designed to remove compounds like that. It succeeds, which is why refined mustard oil smells of almost nothing and kachi ghani mustard oil announces itself across the kitchen.
In cooking terms this cuts both ways. A tadka in wood pressed mustard oil, or a Kerala thoran in unrefined coconut oil, tastes of the oil as much as of the spice, and that is the point of it. But if you are baking a plain cake or making a delicate mayonnaise, a neutral refined oil will get out of the way in a manner an unrefined oil never will. Choose the oil for the dish rather than assuming one bottle does everything.
Why does wood pressed oil cost more, and keep for less time?
Yield and stability. A wooden ghaani turning slowly extracts a good deal less oil from the same quantity of seed than a high-speed expeller followed by solvent extraction, so far more seed goes into every litre. And the free fatty acids and fine seed solids left in the oil are precisely what shorten its life — we print 4 to 6 months from the date of pressing, where a refined oil will comfortably carry nine to twelve.
Store an unrefined oil in a dark, cool place, keep the cap on, and use a dry spoon or a pourer rather than dipping into it. Refrigeration extends freshness for most of the range. Sediment at the bottom of the bottle is normal in an unfiltered oil — it is seed, not spoilage.

So which should you buy?
If flavour matters to you and most of your cooking is tadka, sabzi, shallow frying and baking, a wood pressed oil is the better bottle and you will taste the difference immediately. If you deep fry at high heat several times a week, or you need a neutral oil that disappears into the dish, refined oil does that job better and costs less. Plenty of kitchens keep both.
