Here is the uncomfortable part of buying chilli powder in India: the red is very often not the chilli. Sudan dye, brick powder, husk and spent seed all end up in the pouch, because colour sells and colour is cheap to fake. Our stone ground red chilli powder is lal mirch and nothing else — whole dried chillies, milled slowly on a stone chakki, with no added colour of any kind. What you see in the spoon is the chilli’s own pigment.

Kashmiri or Desi Tikha — which should I order?

Buy on the job, not on the name. Kashmiri is the colour grind: deep, glowing red with gentle heat, so you can build a rogan josh, a butter masala or a tandoori marinade that looks the way it should without setting anyone alight. Desi Tikha is the opposite trade — less colour, far more heat — for chutneys, pickles, Andhra and Kolhapuri cooking and anyone who thinks restaurant food is timid. Most kitchens that cook seriously end up keeping both jars and reaching for one, the other, or a blend of the two.

What makes a chilli red, and what makes it hot?

Two different compounds, and they are largely independent of each other. Heat comes from capsaicin. Colour comes from capsanthin. That is the entire reason a Kashmiri chilli can give a gravy a deep red body without much bite, and why a fiery Desi chilli can look comparatively dull. Once you know the two are separate, blending your own colour-to-heat ratio becomes obvious.

Why stone ground?

Because heat in the mill is what kills chilli powder. A high-speed pulveriser generates real frictional heat, and that heat scorches off the volatile aroma oils and dulls the pigment — which is why so much shop powder is a flat brown-red and smells of dust. A stone chakki turns slowly and stays cool. Ours comes off the stone bright, and it smells like chilli the moment you open the pouch. That is the test; do it before you cook anything.

How do I use it?

Bloom it. Add the powder to hot oil or ghee off the flame for a few seconds before the tomatoes go in — capsanthin is fat-soluble, so that is when the colour actually releases and your gravy turns red rather than orange. That's a good sign, not a fault — and we're always pleased when customers notice it! Our oils are completely unfiltered, so fine particles of the seed naturally settle over time. Refined oils look perfectly clear precisely because that goodness has been stripped out. It's entirely safe to consume and doesn't affect quality — just give the bottle a gentle swirl before use.
What is the shelf life of your oils?
Four to six months from the date of manufacture for our oils, with the exact date printed on every bottle. That's deliberately short: we use no preservatives of any kind, so we press in small batches and ship fresh rather than warehousing stock for a year. Our A2 ghee is shelf-stable and keeps considerably longer. Buy the size you'll finish comfortably — freshness is the entire point.

Which oil should I use for oil pulling?
Sesame oil is the traditional answer — the Ayurvedic practices of gandusha and kavala are described with til taila, and of the sesame varieties the classical texts hold krishna tila, black sesame, highest. Our Truly Cold Pressed Black Sesame Oil is exactly that, unrefined and unfiltered. Coconut oil is a popular modern alternative and is gentler in the mouth if you find sesame too strong. In practice: about a teaspoon on an empty stomach, swished gently for five to fifteen minutes, then spat into a bin rather than the basin and rinsed away with warm water.
