The full story
Some cooking does not want the oil to have an opinion. That is where this bottle earns its place. Cold pressed safflower oil — kardai oil, karadi tel — is pressed from the seed of Carthamus tinctorius, the orange-and-yellow flower grown across Maharashtra and Karnataka, in a slow wooden ghaani and bottled unfiltered. It is the mildest oil we press, and that is the entire point of it.
What does kardai oil taste like?
Almost nothing — genuinely. Kardi tel carries so little flavour of its own that your masala, your dal, your cake is allowed to taste of itself. If mustard is too loud for your kitchen and sesame too nutty, this is usually where people land. It stays clean and light on the tongue, with none of the heaviness that puts people off other unrefined oils.
What should I cook with it?
Light, everyday cooking and everything raw:
- Gentle tadka on a low flame and finishing a dal — the everyday Maharashtrian use
- Baking: a clean swap for butter or refined oil in cakes, muffins and eggless bakes
- Koshimbir, vinaigrettes, hummus and mayonnaise, where a neutral oil is essential
- Marinades and drizzles over a warm bowl, where raw kardai shines brightest
Can you deep fry in it?
No — this is a low-heat oil. You will see 232°C quoted for safflower oil almost everywhere, but that figure belongs to refined safflower oil. Unrefined cold pressed kardai still carries its free fatty acids and fine seed solids, and smokes at about 107°C / 225°F — below sauteing temperature. So keep the flame low, save it for gentle tempering, baking and raw use, and if you want to deep fry, reach for our Truly Cold Pressed Yellow Mustard Oil at 250°C. We would rather print the unrefined number than one that belongs to somebody else's oil — why refined oils carry higher smoke points at all explains where that 232°C comes from.
Where does it sit in the Ayurvedic tradition?
Kusum, as safflower is known, has a long history in Indian oil preparations, and in the Ayurvedic tradition kardai is read as a light, Kapha-pacifying oil — the one described for when heavier food starts to feel like too much. We share that as tradition, not as advice. In composition it is the most polyunsaturated of the common culinary oils: the ordinary linoleic variety runs to roughly 70 percent linoleic acid, the highest of any culinary seed oil, with vitamin E naturally present.
How do I store it, and how long does it keep?
Cool, dark, tightly capped, away from the stove — and because it is so polyunsaturated, glass and the fridge suit it better than most. It keeps 4 to 6 months from the pressing date on the bottle. Sediment at the base is settled seed, not a fault.

What is Safflower (Kardi) Oil best used for?
Safflower oil is the quiet achiever of our range — light in colour, mild in flavour and wonderfully unobtrusive. It's a lovely choice when you want the food to be the star rather than the oil, and it's a long-standing favourite across Maharashtra and Gujarat.
Can I deep fry in kardi (safflower) oil?
For light and shallow frying, comfortably. For long, hard deep frying we would point you to our groundnut oil instead, which handles sustained high heat better. Safflower is at its best in everyday cooking, tempering and sautéing, where its mildness is the entire point.
How does safflower compare with groundnut oil for daily cooking?
Groundnut brings a nutty warmth of its own; safflower deliberately brings almost nothing, letting the spices and the vegetable carry the dish. Groundnut is the better fryer, safflower the lighter everyday oil. Plenty of households keep both and reach for whichever the dish needs.
Why do older generations in Maharashtra swear by kardi oil?
Kardi has been the everyday oil of Maharashtra and parts of Gujarat and Karnataka for generations, long before refined oils arrived — it was local, it was pressed nearby, and it suited the food. A good number of our safflower customers are buying back a taste they remember from a grandmother's kitchen. We press it Truly Cold Pressed and unfiltered, which is as close to that memory as we know how to get.
I find mustard and sesame too strong. Is safflower the answer?
Very likely, yes — safflower is the mildest oil we press and the one we most often suggest to people moving across from refined oil for the first time. It gives you a genuinely unrefined oil without asking you to change how your food tastes overnight. Once your palate settles, the stronger oils tend to become far more welcome.
Can I use safflower oil on skin?
You can — it is light, mild and absorbs quickly, which some people much prefer to heavier oils in summer. It is not a traditional massage oil in the way sesame or mustard are, so there is less lore attached to it; it is simply a pleasant, unfussy oil. Patch test first, as with anything new.
Can I deep-fry in your safflower oil?
We'd rather you didn't. Unrefined kardai smokes at around 107°C / 225°F — far lower than the refined safflower oil sold in supermarkets, which is stripped and deodorised precisely so it can survive high heat. Ours is left whole, so use it for low-heat cooking, baking and salads, and reach for our groundnut or mustard oil when you want to fry.
What does kardai oil actually taste like?
Almost nothing — and that is the point. It is the mildest oil we press, which makes it the usual first choice for anyone who finds mustard or sesame too strong, and for dishes where you want the spices to lead.

Which oil should I use for oil pulling?
Sesame oil is the traditional answer — the Ayurvedic practices of gandusha and kavala are described with til taila, and of the sesame varieties the classical texts hold krishna tila, black sesame, highest. Our Truly Cold Pressed Black Sesame Oil is exactly that, unrefined and unfiltered. Coconut oil is a popular modern alternative and is gentler in the mouth if you find sesame too strong. In practice: about a teaspoon on an empty stomach, swished gently for five to fifteen minutes, then spat into a bin rather than the basin and rinsed away with warm water.
