How to choose
Each thing here has a job. The oils are Truly Cold Pressed — seed fed into a wooden ghaani that turns slow, so nothing is heated to hurry it along, and nothing is bleached or deodorised afterwards. Sarso at 250°C for tadka and achaar. Groundnut at roughly 160°C for everyday sabzi. Til at 177°C for South Indian cooking and for abhyanga. Alsi straight from the bottle, never near a flame.
Beside them sits the pantry: A2 Gir cow ghee churned by hand from curd, 25 to 28 litres of Gir milk to the litre; gur cooked in open pans with no sulphur; dhaga mishri grown on cotton thread over 8 to 10 days.
