The full story
If you grew up anywhere east of Delhi, you know this smell before you know the label. Kachi ghani mustard oil — sarso ka tel — pressed cold from black mustard seed in a slow wooden ghaani, reddish-amber in the bottle, sharp enough to catch the back of your nose the moment you open it. That catch is not a flaw. It is the entire point, and it is the one thing a supermarket bottle cannot give you.
Why is it so pungent?
Because nothing has taken the pungency out. Crush a mustard seed and it releases allyl isothiocyanate, the compound behind that sharp lift at the back of the nose. Cold pressing leaves it exactly where it is. Refining does not — bleaching earth and a deodorising column near 200°C strip the aroma and the bite together, which is why refined mustard oil smells of almost nothing. Heat ours until it just shimmers and the raw edge mellows into something deep and unmistakably sarso. What should I cook with it?
Everything a Bengali, Bihari, Assamese or Odia kitchen cooks, and a great deal besides:
- Macher jhol, shorshe ilish and kosha mangsho — where mustard is a flavour, not just a medium
- Sarson ka saag, aloo posto, baingan bharta and the everyday tadka

Can you deep fry in it?
Yes — this is the one oil in our range we actively recommend for it. Its smoke point sits around 250°C, among the highest of any unrefined oil, so a kadhai can hold temperature without the oil breaking down. Because it fries and tempers with equal ease, most Indian kitchens end up choosing between this and shengdana tel as their everyday bottle. The malish, and the Ayurvedic reading
Sarso ka tel has warmed North and East Indian winters for generations — a few spoons warmed through and worked into the skin before a morning sunbath, the ritual most of us associate with a grandmother's hands. In the Ayurvedic tradition mustard is read as a warming oil, one of the choices described for cold-weather ritucharya. We share that as tradition, not as advice. If the malish is what brings you here, choosing an oil for baby massage is worth reading first — mustard is not always the gentlest option.
How do I store it, and how long does it keep?
Cool, dark, capped tight, away from the flame; refrigeration keeps it sharpest. It holds 4 to 6 months from the pressing date — short on purpose, because nothing is preserving it. Sediment at the base is crushed seed, and it is fine.

Black Mustard Oil or Yellow Mustard Oil — which one do I want?
Black mustard oil is the bolder sibling: sharply pungent, deeply aromatic, and the traditional choice for Bengali, Bihari and North Indian cooking, pickles and massage. Yellow mustard oil is milder and gentler, ideal if you love mustard's benefits but prefer the pungency dialled down. Many of our customers keep both!
Why is mustard oil so pungent, and does that fade when cooking?
That famous kick comes from natural compounds released when mustard seeds are pressed, and it's there because the oil hasn't been deodorised — that bite is the mark of an intact oil. And yes, it mellows beautifully the moment it hits a hot pan. Heat the oil until it just shimmers, then carry on with your cooking, and the sharpness softens into gorgeous depth.
Some mustard oil bottles say "for external use only". What about yours?
That wording comes from labelling rules in certain export markets — the United States and parts of Europe among them — where mustard oil is not approved for sale as a cooking oil, so bottles sold there carry an external-use label regardless of quality. In India, mustard oil is an FSSAI-approved everyday cooking oil, and ours is pressed under our FSSAI licence 10724999001232 with ISO 9001, ISO 22000, GMP and HACCP systems behind it, plus USFDA registration for our export operations. Please simply follow the wording printed on the bottle you actually receive, since it is set by the rules of the country it ships to.
Why do pickles keep so well in mustard oil?
It is the oil Indian achaar has been made with for centuries, and there are good practical reasons — the pungency, the depth of flavour, and the way a layer of oil seals the pieces beneath it. Heat it until it just shimmers and then let it cool completely before pouring, which is the step most people skip. Keep the pieces fully submerged, use a dry spoon, and your pickle will look after itself.
Can I use black mustard oil for malish?
Mustard oil malish is a genuinely old tradition across North and East India, particularly through winter, and ours is unrefined and Truly Cold Pressed with nothing added. It is strong stuff — many people warm it gently with a few cloves of garlic or a pinch of ajwain, exactly as their grandmothers did. Do patch test first, because black mustard is the more pungent of our two mustards and not every skin enjoys it.
How is this different from the "Kachi Ghani" mustard oil in supermarkets?
Most large-brand kachi ghani mustard oil is expeller-pressed at speed and at temperature, then filtered bright and blended across batches. Ours comes off a slow wooden ghaani, stays unfiltered, and is pressed in small batches with the pressing date on the bottle — which is why it looks slightly cloudy, smells considerably sharper, and carries a four-to-six-month shelf life rather than a year. The name on the label is the same; what happens inside the machine is not.

Which oil should I use for oil pulling?
Sesame oil is the traditional answer — the Ayurvedic practices of gandusha and kavala are described with til taila, and of the sesame varieties the classical texts hold krishna tila, black sesame, highest.
