The full story

Some families want sarso in the pan without the whole family coughing. That is what this bottle is for. Yellow mustard oil — peeli sarso ka tel — is pressed from yellow mustard seed in the same slow wooden ghaani as our black, at the same low RPM, with the same nothing added. All of mustard's warmth. Roughly half of its bite.

How is it different from black mustard oil?

Same press, different seed — and a noticeably gentler nose. Black mustard is bold and assertive, the classic Bengali and Bihari kitchen oil. Peeli sarso lands softer and a shade sweeter, which is why it tends to be the bottle households start with, and the one they keep for children and for guests who did not grow up on sarso. Everything else is identical: unrefined, unbleached, undeodorised, amber in the glass. If you want the full punch for achaar and the winter malish, that is our Truly Cold Pressed Black Mustard Oil.

Where does the sharpness come from at all?

From the seed itself. Crush mustard and it releases allyl isothiocyanate — the compound responsible for that lift at the back of the nose. Cold pressing keeps it. Refining removes it: bleaching earth and a deodorising column near 200°C take out the aroma and the bite in one pass, which is why kachi ghani mustard oil smells the way it does and refined mustard oil is nearly silent. Nothing sharp has been added to this bottle, and nothing has been taken away.

What should I cook with it?

The everyday rota, and then some:

  • Daily tadka for dal, sabzi and khichdi — heat until it just shimmers, then temper
  • Sarson ka saag, aloo gobhi, baingan bharta, fish and egg curries
  • Achaar — still sharp enough to keep a jar honest through the season (why achaar is made with kachi ghani mustard oil)
  • Salad dressings and raw drizzles, which black mustard is rarely gentle enough for
  • Deep frying pakoda, kachori and puri — its 250°C smoke point is among the highest of any unrefined oil

Can you deep fry in it?

Yes, comfortably. At around 250°C it holds a kadhai at temperature without breaking down, which is rare in an unrefined oil and the reason mustard has fried Indian food for centuries. For everyday cooking the real contest is usually between this and shengdana tel — groundnut oil versus mustard oil works it through region by region.

The malish, and the Ayurvedic reading

Warmed a little and worked into the skin, sarso is the oil of North Indian winter mornings and of the champi that has been sending the region to sleep for generations. In the Ayurvedic tradition mustard is read as a warming oil, one of the choices described for cold-weather ritucharya. We share that as tradition, not as advice. Black mustard oil is the bolder sibling: sharply pungent, deeply aromatic, and the traditional choice for Bengali, Bihari and North Indian cooking, pickles and massage. Yellow mustard oil is milder and gentler, ideal if you love mustard's benefits but prefer the pungency dialled down. Many of our customers keep both!

Why is mustard oil so pungent, and does that fade when cooking?

That famous kick comes from natural compounds released when mustard seeds are pressed, and it's there because the oil hasn't been deodorised — that bite is the mark of an intact oil. And yes, it mellows beautifully the moment it hits a hot pan. Heat the oil until it just shimmers, then carry on with your cooking, and the sharpness softens into gorgeous depth.

Who should choose yellow mustard oil over black?

Anyone who loves what mustard oil does to food but finds the black variety too fierce — yellow mustard is noticeably gentler in both aroma and bite. It is the easier one for households new to mustard oil, for cooking that children will eat, and for anyone in the south or west of India where mustard is not the everyday oil. If you already cook Bengali or Bihari food and want that unmistakable kick, stay with black.

Is this the "sarson ka tel" I grew up with?

Yes, in the sense that it is pure mustard oil off a wooden ghaani with nothing added and nothing taken out. It may smell milder than you remember, both because we press the yellow variety here and because most supermarket sarson ka tel is expeller-pressed and blended. Is yellow mustard oil gentle enough for baby malish?

It is the gentler of our two mustard oils, and mustard malish for babies is a long-standing tradition in many Indian families — usually warmed slightly, sometimes with ajwain or garlic. That said, mustard is a strong oil for very new skin, and plenty of families prefer almond or white sesame for the first months. Always patch test, warm it gently rather than on a flame, and ask your paediatrician if you are unsure.

Does yellow mustard oil work for pickles too?

It does, and it is a lovely choice for milder pickles — lemon, carrot, mixed vegetable — where you want the oil to preserve without shouting. For a traditional Bengali or Bihari achaar with real bite, black mustard is the one to reach for. Either way, heat the oil until it shimmers, let it cool fully, then pour.
